L&rsquo;\u00e9pice la plus ch\u00e8re au monde, surnomm\u00e9e l&rsquo;or rouge, s&rsquo;inscrit d\u00e9sormais dans une dynamique organis\u00e9e qui mobilise la recherche scientifique, les institutions publiques et les agriculteurs autour d&rsquo;un objectif commun : \u00e9riger cette plante aux vertus exceptionnelles en fili\u00e8re agricole structur\u00e9e, capable de conqu\u00e9rir les march\u00e9s internationaux.&nbsp;Cette transformation s&rsquo;est acc\u00e9l\u00e9r\u00e9e en septembre dernier avec le lancement de la strat\u00e9gie nationale de d\u00e9veloppement de la fili\u00e8re \u00ab\u00a0Safran DZ\u00a0\u00bb \u00e0 l&rsquo;\u00c9cole nationale sup\u00e9rieure agronomique. Port\u00e9e conjointement par le minist\u00e8re de l&rsquo;Enseignement sup\u00e9rieur et de la Recherche scientifique et celui de l&rsquo;Agriculture, du D\u00e9veloppement rural et de la P\u00eache, cette initiative marque un tournant d\u00e9cisif. Selon le professeur Fatma Halouane, directrice centrale \u00e0 la Direction g\u00e9n\u00e9rale de la recherche scientifique et du d\u00e9veloppement technologique,&nbsp;et dont les propos ont \u00e9t\u00e9 cit\u00e9s par l\u2019APS,&nbsp;cette strat\u00e9gie joue \u00ab\u00a0un r\u00f4le d\u00e9terminant\u00a0\u00bb car elle vise \u00e0 \u00ab\u00a0structurer une fili\u00e8re en int\u00e9grant recherche scientifique, innovation et entrepreneuriat\u00a0\u00bb. L&rsquo;objectif principal consiste \u00e0 int\u00e9grer les agriculteurs dans un cadre institutionnel capable de valoriser pleinement le potentiel de cette \u00e9pice \u00e0 forte valeur ajout\u00e9e, reconnue pour ses vertus nutritionnelles et m\u00e9dicinales.<\/p>\n\n\n\n<p>La mise en place de trois stations pilotes \u00e0 Alger, Constantine et Gharda\u00efa constitue le socle op\u00e9rationnel de cette strat\u00e9gie. Ces sites permettent de tester l&rsquo;ensemble de la cha\u00eene de production, de la plantation \u00e0 la r\u00e9colte, en passant par le s\u00e9chage et le conditionnement. Les r\u00e9sultats obtenus d\u00e9passent toutes les pr\u00e9visions initiales. \u00c0 l&rsquo;\u00c9cole nationale sup\u00e9rieure agronomique, Sihem Tellah, cheffe du projet Safran DZ, se f\u00e9licite d&rsquo;une cueillette qui \u00ab\u00a0a d\u00e9pass\u00e9 nos pr\u00e9visions\u00a0\u00bb. En moyenne, 1.700 fleurs ont \u00e9t\u00e9 r\u00e9colt\u00e9es quotidiennement sur une p\u00e9riode d&rsquo;une dizaine de jours, chaque bulbe produisant jusqu&rsquo;\u00e0 cinq fleurs et chaque fleur offrant entre trois et cinq stigmates, ces pr\u00e9cieux filaments rouges qui constituent la partie commercialis\u00e9e de la plante. \u00ab\u00a0Durant les prochaines ann\u00e9es, la production sera encore plus abondante\u00a0\u00bb, assure-t-elle, \u00e9voquant l&rsquo;effet cumulatif des plantations et l&rsquo;am\u00e9lioration progressive des techniques culturales.Au-del\u00e0 des volumes, c&rsquo;est la qualit\u00e9 du safran alg\u00e9rien qui impressionne. Le projet de recherche euro-m\u00e9diterran\u00e9en Prima SaffronFood, auquel participent six pays dont l&rsquo;Allemagne, l&rsquo;Italie, le Portugal, l&rsquo;Espagne et l&rsquo;Alg\u00e9rie, \u00ab\u00a0a d\u00e9montr\u00e9 la qualit\u00e9 premium du safran alg\u00e9rien, vu notamment son taux \u00e9lev\u00e9 de crocine (+19 %), un r\u00e9sultat \u00e9quivalent aux standards des meilleurs safrans mondiaux\u00a0\u00bb, affirme le professeur Halouane. La crocine, principal pigment responsable de la couleur caract\u00e9ristique du safran, constitue un indicateur cl\u00e9 de qualit\u00e9 sur les march\u00e9s internationaux.&nbsp;Ces travaux scientifiques ont \u00e9galement permis de cartographier les zones les plus propices \u00e0 cette culture exigeante. Le safran s&rsquo;adapte particuli\u00e8rement bien au climat des Hauts plateaux et aux zones montagneuses, caract\u00e9ris\u00e9es par des hivers froids et des \u00e9t\u00e9s secs. Les rendements varient selon les r\u00e9gions, oscillant en moyenne entre 2 et 3 kilogrammes par hectare, mais peuvent atteindre 5 \u00e0 7 kilogrammes dans les conditions optimales. La wilaya de Khenchela se distingue particuli\u00e8rement, ses conditions p\u00e9doclimatiques \u00e9tant \u00ab\u00a0particuli\u00e8rement favorables \u00e0 cette culture\u00a0\u00bb, souligne le professeur Tellah, qui qualifie le lancement de cette strat\u00e9gie de \u00ab\u00a0d\u00e9cision historique, qui s&rsquo;appuie sur des ann\u00e9es de recherche scientifique\u00a0\u00bb.<\/p>\n\n\n\n<p>Selon le Centre de recherche scientifique et technique sur les r\u00e9gions arides, la fili\u00e8re compte aujourd&rsquo;hui plus de 222 producteurs \u00e0 travers le pays. Ces exploitations pr\u00e9sentent des profils vari\u00e9s, allant de petites parcelles familiales \u00e0 des champs atteignant 3 \u00e0 4 hectares, notamment dans les wilayas de Khenchela, Gharda\u00efa et Tlemcen. Cette diversit\u00e9 t\u00e9moigne de l&rsquo;int\u00e9r\u00eat croissant des agriculteurs pour une culture dont la rentabilit\u00e9 potentielle est consid\u00e9rable, compte tenu des prix pratiqu\u00e9s sur le march\u00e9 mondial.<\/p>\n\n\n\n<p>La valorisation de la plante ne se limite d&rsquo;ailleurs pas aux seuls stigmates. Les p\u00e9tales du safran sont \u00e9galement exploit\u00e9s par l&rsquo;industrie pharmaceutique pour la fabrication de m\u00e9dicaments et de produits de soins corporels. L&rsquo;\u00c9cole nationale sup\u00e9rieure agronomique cherche actuellement \u00e0 conclure un partenariat avec le groupe Saidal afin de valoriser ces sous-produits et maximiser la rentabilit\u00e9 de la fili\u00e8re.<\/p>\n\n\n\n<p>Cette structuration progressive de la culture du safran s&rsquo;inscrit dans une perspective \u00e0 long terme. La raret\u00e9 naturelle de la plante et la main-d&rsquo;\u0153uvre intensive qu&rsquo;exige sa production justifient les prix \u00e9lev\u00e9s pratiqu\u00e9s sur le march\u00e9 international. En d\u00e9veloppant une fili\u00e8re organis\u00e9e, dot\u00e9e de standards de qualit\u00e9 reconnus et capable de produire des volumes commerciaux significatifs, l&rsquo;Alg\u00e9rie se positionne pour capter une part de ce march\u00e9 lucratif.
