Cette renaissance \u00e9ditoriale permet de red\u00e9couvrir un travail pionnier qui a marqu\u00e9 des g\u00e9n\u00e9rations de passionn\u00e9s et continue d&rsquo;inspirer celles et ceux qui s&rsquo;attachent \u00e0 pr\u00e9server les saveurs authentiques du terroir alg\u00e9rien. L&rsquo;ouvrage s&rsquo;impose par son ampleur : 495 pages r\u00e9parties en sept chapitres qui rassemblent plus de 450 recettes glan\u00e9es aux quatre coins du pays. V\u00e9ritable invitation au voyage gustatif, ce livre propose une travers\u00e9e du patrimoine culinaire alg\u00e9rien dans toute sa diversit\u00e9 r\u00e9gionale. Chaque recette d\u00e9voile les secrets d&rsquo;une p\u00e2tisserie familiale r\u00e9ussie, transmise de g\u00e9n\u00e9ration en g\u00e9n\u00e9ration.<\/p>\n\n\n\n<p>La derni\u00e8re partie de l&rsquo;ouvrage aborde un aspect souvent n\u00e9glig\u00e9 mais essentiel de la tradition culinaire : les m\u00e9thodes de conservation. Confitures et sirops de fruits y voisinent avec les techniques ancestrales de pr\u00e9paration du Qedid (viande s\u00e9ch\u00e9e) et de conservation des fruits et l\u00e9gumes. Olives, raisins, figues, tomates, petits pois, poivrons et piments trouvent ainsi une seconde vie dans les garde-manger alg\u00e9riens.
